In a recent LinkedIn post, I explored the often-overlooked details of how Oleoresin is extracted from spices and its implications for consumers. Many might be unaware of the impact this industrial process has on the quality and authenticity of the spices we consume daily.
The process of Oleoresin extraction starts with grinding spices into a fine powder to increase surface area for better extraction. This step alone results in a significant loss of the volatile compounds that give spices their characteristic aroma. More than 50% of Oleoresin consists of these volatile compounds, and their quality is affected by the heat generated during grinding.
Next comes solvent extraction, where chemicals like hexane, acetone, or ethanol are used to pull out whatever remains of the Oleoresin. But with this, there is always a risk of unwanted substances sneaking into the final product. Post extraction, the solvent has to be removed, and this is where vacuum distillation comes in, evaporating the solvent out of the mixture. Some companies even add water, and occasionally, nature-identical substances are introduced to enhance flavor artificially.
The entire process is reminiscent of how refined oils are made, and just like how cold-pressed oils are superior and safer because no chemicals are involved, the same principle applies to spice powders. Big brands often use Oleoresins to cut costs, producing cheaper but inferior spice powders. Lab tests may not detect these artificial additions, but you, as the customer, will notice the difference. These powders sometimes leave unpleasant aftereffects like burning sensations and gastritis, recent study links ultra processed food with diabetes.
The question remains: would you prefer chemically extracted additives in spice powders or 100% natural, cold-ground powders that deliver flavor, health, and authenticity?
